What does Tyromancy mean?

A form of divination involving observation of cheese, especially as it coagulates – in other words, your future is dependent on how the curds form. See also; omens found in and on cheese.

Why include a dairy free section?`

A cheese plate is the easiest way to accommodate all dietary restrictions - even dairy free. With so many interesting and high end dairy free ‘cheese’ options on the market, I wanted to make sure there was a range of snacks to accommodate.

About TFS Founder, Shannon Onstot

Shannon is new to New York state by way of California. She spent 14 years working in TV production, mainly in game show prizing, and got her start in news. When she left California after having a child, she couldn’t fathom going back to a desk job. She needed to be outside, to connect with the community around her, and pursue a passion that involved and benefitted her family in a sustainable way.

As a gluten free diabetic, she has been studying and researching GF, low glycemic foods for the better part of a decade and discovered two things – 1) everything is better when she just makes it herself and 2) cheese doesn’t solve problems, but it certainly helps.

In addition to TFS she is currently pursuing a Certified Cheese Professional Certification through Whole Foods Market. She discovered a love of cheese and a new passion for pairing after spending a summer assisting with the culinary program at The Inn at Stockbridge in The Berkshires – testing recipes on guests, tasting local ingredients, and meeting local merchants. TFS is an extension of Shannon – always evolving, trying new things, and hardcore fancy snacking.
